Keep in mind that this is coming from an awful cook, but might it be better to start with the most simple recipe? Then you can just concentrate on getting the duck right, and can experiment another time. Just a thought.
Know what you mean about LJ stealing personal pronouns. ;) It's worlds better than some AIM-speak, however.
